Once upon a time our Cuvée « Zero Sulphite »… It all began in 2007 with the first trials of vinifying Châteauneuf du Pape without sulphite or selected yeast. It took several years to bring this project to fruition. The advantage of 'Sans Soufre' is that it preserves the expression of the grape varieties and the terroir. More natural than ever, this no-sulphite-added wine is made with respect for authenticity and nature. We use the best grapes from Clos Saint Michel to make this wine. In 2016, the first cuvée was matured in barrels for a year. A truly exceptional product, only 800 bottles of this cuvée are produced each vintage. . -

Le fond floral se teinte de poivre noir, girofle, cannelle. La bouche soyeuse, dévoile une présence fraiche dynamique, une force tannique toute en élégance, enrobé par la chair généreuse, épicée. Les arômes fruités et floraux du nez reviennent au palais, accompagnés de réglisse sur une finale longue, chocolatée. Vin de grande garde 10-12 ans d’attente pour se lancer sur un palier de maturité de plus d’une vingtaine d’années. Récompensés par d’excellentes notes de dégustation Robert Parker et Jeb Dunnuck allant de 94 à 97 - 400 caisses produites et numérotées. -

Nose is intense, deep, evoking rich scents of dark fruits such as black cherries, blackberries and prunes. Chocolate and oaky spices such as cinnamon, nutmeg come along and add layers of complexity together with some wild violet flowers hues. Rich, intense, of a high level of definition. Palate is dry, velvety, of medium acidity, tannins are high and fine grained, chocolate-like, perfectly balanced with the mouthfeel. Generous, spicy, with rich but integrated alcohol, the flavours are intense, with lots of dark fruit, pepper, liquorice, again cinnamon and nutmeg, and linger on the long finish with flowery perfumes 10 years to be awaited, 20 years and more for the cellarability. Avec une finale onctueuse, on peut le servir sans attendre après un passage en carafe avec les meilleures viandes et du gibier. Un grand vin qui n’a pas encore dévoilé tout son immense potentiel. Nose is airy, intense, with fine aromas evoking the Morello cherry, the black plums and blueberries. Chocolate and graphite notes come along, intertwined with violet flowers and wild roses, with a hint of spices. Fine and complex, with well-defined aromas. Palate is dry, high, tonic acidity, in a juicy manner, with high and tight tannins, but very fine-grained, texture is silky and dense, alcohol feels generous but is integrated with the body, the flavours are pronounced. A spicy profile, where dark fruit mixes up with cloves, chocolate and liquorice. Long, ever-lasting, with wild cherry bitterness and black chocolate note lingering on the aftertaste. 10-15 years to reveal and 30 years plus for the potential. Ideal partner for wild dear fillet, pan seared and accompanied with blackcurrant sauce, chanterelle mushrooms and chestnuts. APPELLATION : AOP Châteauneuf-du-pape Rouge Cuvée Réservée Rouge CÉPAGES : syrah 30% grenache 40% mourvèdre 30% PRODUCTION : 1 000 bouteilles LOCALISATION : Les vignes poussent sur des terrasses de galets roulés, admirablement exposées (ancien lit du Rhône). La chaleur du soleil emmagasinée par les galets le jour est restituée au sol et aux grappes durant la nuit. Le rendement est volontairement limité à moins de 30 hl /hect. La vendange manuelle est égrappée en totalité, la macération dure de 20 à 28 jours, puis le vin est élevé pendant au moins un an en barrique. CARACTÉRISTIQUES : Ce vin est issu d’une sélection rigoureuse des meilleurs raisins. Un beau travail de vieilles vignes, excellemment cultivées et une production à faibles rendements contribuent à l’élaboration d’un vin plus concentré, plus apte à l’élevage en barriques (dix mois à un an). Vin réglissé en bouche, assez corsé pour supporter toutes sortes de gibiers. Son excellente structure en fait un vin de grande garde.
